HARVESTED

Our process begins with handpicked, ethically sourced, and properly matured agaves.

ROASTED

Once harvested, the Maestro Mezcalero determines the length of time the piñas are cooked using responsibly sourced oaks.

PRESSED

The carefully roasted piñas are then pressed for their juices using a traditional tahona, which is pulled by a burro (donkey).

FERMENTED

Natural alchemy happens during this phase where ambient, wild yeasts begin to eat the sugars from the agave which turns into alcohol.

DISTILLED

All our Mezcales are distilled twice using traditional copper alembic stills

BOTTLED

Our Mezcales are carefully hand-bottled and stamped with artisanal labeling in Tlalixtac de Cabrera, Oaxaca.
